A Lame (pronounced LAHM, meaning “blade” in French) is typically a long thin stick made to hold a metal razor used to cut or score bread dough to help control the expansion of the loaf as it bakes. Bread lames are a natural add-on for any shop stocking sourdough or bread-baking supplies — and your customers will ask for one eventually. The question is whether you have one worth recommending. We spent a long time without carrying a lame because we couldn't find one that met the bar. Most on the market are either overpriced for what they are or cheap disposables that dull quickly and get tossed. We wouldn't stock either of these options on our own shelves, and we certainly wouldn't wholesale it to yours. So we made our own: the Breadtopia Bread Lame. It has an easy grip handle allows for steady control and accurate cutting. It also uses inexpensive replaceable double edge blades which makes it both economical and ecological. Since you’re only cutting with one corner of the blade at a time and the blade can easily be rotated, you get maximum life out of each blade. The handle is plastic — intentionally. It keeps the price accessible, it won't rust or warp, and it's non-porous so it cleans up easily and won't harbor bacteria. It's the right material for the right tool for the right customer.
